素食蔬菜腐卷   vegetarian diet Bean Curd Vegetable Roll

心得交流站 :腐皮卷外皮容易焦, 要用慢火半煎炸。

步驟 1
沙葛絲用清水沖洗過,用於榨去水份,備用。
Wash Sengkuang and then squeeze off water by hand.

步驟 2
芋頭絲用油炸過,備用。
Deep fry the juliennes yam until crispy.

步驟 3
燒熱1大匙油,炒香四季豆絲,再加入所有餡料快手兜炒,加入調味料炒勻上碟。
Heat 1 tbsp oil in wok,sauté French bean,then toss in all other filling ingredients,add seasoning and stir to mix,dish out.

步驟 4
取一片腐皮,加入適量餡料,撒上材料B,包成春卷狀,用麵糊收口,至全部包卷好,用油半煎炸至金黃色即可,享用時配上沾醬。
Place some filling on top of bean curd skin,sprinkle ingredients B on top,roll up and seal it. After finish prepare all rolls,deep fry them until golden brown. Serve with dipping sauce.
